Ingredients

  • 2 tablespoons canola oil

  • 2 tablespoons fresh ginger, peeled and grated

  • 1/2 teaspoon ground cumin

  • 4 cups water

  • 2 cups basmati rice

  • 2 teaspoons salt

  • 1 large lime, zested and juiced

Directions

  • Heat the canola oil in a large saucepan over medium heat until very hot.

  • Cook the ginger and cumin in the pan for about 1 minute.

  • Add the water and bring to a boil. When boiling, add the rice and salt. Stir to combine.

  • Cover and cook the rice for about 15 minutes over low heat. There should be no water left in the pan and the rice should be tender.

  • Stir in the lime juice and zest. Serve immediately.
