Ingredients

  • 1 cup asparagus, diced

  • 1 cup Roma tomatoes, diced

  • 1 cup red bell pepper, diced

  • 1 tablespoon garlic, minced

  • 1 loaf French bread, halved, cut into 4-inch sections (four slices of bread total)

  • 1 cup pizza sauce

  • 1 cup reduced-fat shredded mozzarella cheese

Directions

  • Preheat the oven to 400°F. Coat a baking sheet with cooking spray.

  • Combine the asparagus, tomatoes, pepper, and garlic in a small bowl, tossing to coat the fruit and vegetables with garlic.

  • Place the slides of bread onto the baking sheet, and top each slice of bread with equal portions of the pizza sauce, vegetable mixture, and mozzarella cheese.

  • Place baking sheet in over and bake for 8-10 minutes until the cheese becomes lightly browned and the vegetables are tender. Serve immediately.
