Ingredients

  • 3 asparagus spears

  • 8 ounces crab meat, any shells or cartilage removed

  • 1/3 cup celery, finely chopped

  • 1/4 cup red bell pepper, finely chopped

  • 1 scallion, finely chopped

  • 4 teaspoons lemon juice

  • 1 tablespoon low-fat mayonnaise

  • 1/4 teaspoon seafood seasoning

  • 2-5 dashes hot sauce

  • Freshly ground black pepper, to taste

  • 4 whole-wheat English muffins, split and toasted

  • 1/2 cup shredded Swiss cheese

Directions

  • Move the oven rack in the upper third of the oven and preheat the broiler.

  • Add the asparagus to a microwave-safe bowl with 1 teaspoon of water. Cover and microwave for about 30 seconds. Add the celery, bell pepper, crab, scallion, lemon juice, mayonnaise, Old Bay seasoning, hot sauce, and pepper. Stir together.

  • Place the English muffin halves with the cut side up on a baking sheet. Spread 1/4 cup of the crab salad on each muffin half. Top each half with 1 tablespoon of cheese. Broil for about 3-6 minutes, until the cheese is melted.
