Ingredients

  • 2 slices bacon, diced

  • 1 cup mushrooms, sliced

  • 2/3 cup onion, diced

  • 1/2 cup red bell pepper, diced

  • 1 (12 ounce) can of corn

  • 4 cups chicken broth

  • 2 cups cooked chicken, diced

  • 2 cups salsa

  • 1/2-1 tablespoon taco seasoning

Directions

  • In a large saucepot, cook the bacon until crisp.

  • When the bacon is cooked, remove it from pan and place on a paper towel to remove excess fat.

  • Without rinsing the frying pan, add the vegetables and cook until soft.

  • Add the bacon, chicken broth, diced chicken, salsa, and taco seasoning to the pan. Bring to a boil, then reduce heat and simmer for 10 minutes.

  • Serve with cheese and tortilla chips if desired.
