Ingredients

  • 1 1/4 cups dry black eyed peas

  • 1 cup green bell pepper, diced

  • 1/2 cup green onion, finely chopped

  • 1/4 cup red bell pepper, diced

  • 1/4 cup jalapeño pepper, finely chopped and seeded

  • 3/4 cup low-calorie, gluten free Italian dressing

Directions

  • On a stovetop, bring 3 cups of water to a boil.

  • Add the black eyed peas to the boiling water, reduce heat, and simmer until the beans are tender (approximately 45 minutes).

  • Drain the beans and allow them to cool before mixing the cooked beans with the other vegetables.
