Ingredients

  • 4 tablespoons blue cheese

  • 1 tablespoon red wine vinegar

  • 3 tablespoons olive oil

  • Salt to taste

  • Freshly ground black pepper to taste

  • 1 head butter lettuce

  • 1 avocado cut into thin slices

  • 1/2 cup toasted walnuts

Directions

  • Combine two tablespoons of the cheese and vinegar in a blender until smooth. Slowly add oil and blend until the mixture is smooth. Remove into a bowl and season with salt and pepper.

  • In a large bowl, toss the lettuce and avocado with dressing and season to taste with salt and pepper.

  • Place salad on a serving plate with the walnuts. Crumble the remaining two tablespoons of cheese on top and serve.
