Ingredients

  • 2 (15 ounce) cans of garbanzo beans, drained

  • 1 green bell pepper, chopped

  • 1 red bell pepper, chopped

  • 1 cup diced sweet yellow onion

  • 1 cup cherry or grape tomatoes

  • 1/4 cup freshly squeezed lime juice

  • 1/4 cup extra virgin olive oil

  • 1 teaspoon ground cumin

  • 1/2 teaspoon sea salt

  • 1/2 teaspoon black pepper

  • 3 minced garlic cloves

  • 10 black olives

  • 1/2 cup chopped fresh parsley

Directions

  • Add the garbanzo beans, red and green peppers, tomatoes, onion, olives, and chopped parsley to a large bowl.

  • Add the lime juice, garlic, cumin, olive oil, salt, and pepper to a blender to combine the ingredients.

  • Pour this dressing blend over the garbanzo bean salad. Cover the salad and refrigerate for approximately one hour before serving.
