Ingredients

  • One 7-ounce can tuna, drained

  • 1 cup dry couscous

  • 1/2 cup frozen corn, thawed and drained

  • 2 tablespoons cilantro, minced

  • 2 tablespoons red wine vinegar

  • 1 tablespoon olive oil

  • Black pepper, to taste

Directions

  • Pour 2 cups of boiling water over the couscous and let stand for 5minutes until the water is absorbed.

  • Combine the drained tuna with the couscous. Add the corn, cilantro, red wine vinegar, and olive oil to mixture. Grind in fresh pepper, and serve at room temperature.
