Ingredients

  • Cookies

    • 1 cup sugar

    • 3/4 cup shortening

    • 1 1/2 tablespoons water

    • 1 1/2 tablespoon olive oil

    • 1 teaspoon baking powder, mixed together

    • 1 cup grated carrots

    • 2 cups flour

    • 2 teaspoon baking powder

    • 1/4 teaspoon salt

    • 1 teaspoon vanilla extract

  • Orange glaze

    • 1/2 cup powdered sugar

    • 1 teaspoon orange juice

    • 1/2 teaspoon water

Directions

  • Cookies

    • Set an oven to 350°F.

    • Blend the sugar and shortening thoroughly with a mixer or whisk.

    • Mix the water, oil, and baking powder together and add to the sugar and shortening mixture. Mix in the carrots.

    • Combine the flour, baking powder, and salt in a different bowl.

    • Stir the mixtures together. Add the vanilla extract.

    • Place by spoonful onto cookie pan.

    • Bake for 15-18 minutes, or golden brown.

    • Spread the orange glaze lightly over the cookies, if desired.
