Ingredients

  • ½ small pitted avocado

  • 1 tablespoon reduced-fat mayonnaise

  • 1 teaspoon blackening or Cajun seasoning

  • 8 ounces salmon fillet

  • 2 whole-wheat rolls

  • 1 cup arugula

  • 1 thinly sliced tomato

  • ¼ cup thinly sliced red onion

Directions

  • Skin and divide the salmon into two pieces. Cook on grill until flaky but not dry.

  • Mix the avocado and mayonnaise together. Cut the rolls in half and toast on the grill. Add half of the the avocado mixture, salmon, arugula, onion, and tomato to one-half of each roll. Top with the other half of the roll and serve.
