Ingredients

  • 1 1/2 cups cooked bulgur

  • 1 1/2 cups cooked beluga lentils

  • 1/2 cup minced sweet onion

  • 1/2 cup chopped fresh parsley

  • 2 tablespoons rice vinegar

  • 2 tablespoons vegetable oil

  • 1 teaspoon oregano

  • 1 teaspoon minced garlic

  • Coarse salt

  • Cracked black pepper

Directions

  • Combine the cooked bulgur and lentils into a large bowl. Mix the vinegar, onion, oil, parsley, garlic, and oregano together in a small bowl. Pour this mixture into the bulgur and lentil mixture.

  • Mix everything together until the bulgur and lentils are coated in dressing. Season the mixture with salt and pepper to taste and chill for at least one hour before serving.
