Ingredients

  • 1 cup cooked fava beans

  • 1 cup cooked chickpeas

  • 3 cloves garlic

  • 1/2 medium onion, chopped (about 1/2 cup)

  • 1 handful fresh parsley, chopped (optional)

  • 1 lemon, juiced and zested

  • 1 teaspoon baking powder

  • 2 tablespoons ground cumin

  • 1 tablespoon ground coriander

  • 1 teaspoon black pepper

  • 1/4 teaspoon salt

  • 1/4 cup whole wheat flour

  • 2 tablespoons olive oil

Directions

  • Preheat an oven to 425 degrees Fahrenheit.

  • Pulse the beans in a food processor until they are crushed but not squishy.

  • Add the remaining ingredients except for the olive oil, and pulse until evenly mixed.

  • Pour the mixture into a bowl. It should stick together so add more flour if necessary.

  • Pour the olive oil on a baking sheet and add the mixture. Make ball shapes slightly less than 2 inches in diameter.

  • Bake the balls for 20 minutes then flip and continue for another 15 minutes or until brown and crispy.

  • Serving suggestion: lemon-tahini dressing.
