Ingredients

  • 2 cups ground turkey

  • 1/4 cup sun-dried tomatoes, chopped

  • 1 (10 ounce) package frozen chopped spinach, thawed

  • 1/2 onion, chopped

  • 1/4 cup low-fat feta cheese

  • 1 cup oats

  • 1 teaspoon garlic powder

  • 1 teaspoon dried oregano

  • 1/2 cup skim milk

  • Cooking spray

Directions

  • Preheat an oven to 400 degrees F.

  • Spray a medium-sized skillet with cooking spray and cook the sun-dried tomatoes, spinach, and onion over medium heat until tender, about 5-6 minutes. Remove from heat and mix in the feta cheese. Set aside.

  • In a large bowl, combine the ground turkey, oats, garlic powder, oregano, and skim milk.

  • Coat a baking pan with cooking spray. Cover the bottom of the pan with approximately 2/3 of the ground turkey mixture, creating a large indentation in the middle.

  • Fill the indentation with the spinach mixture and then top it with the remaining turkey mixture, so that the spinach mixture is encased within the turkey loaf.

  • Bake for 30-35 minutes or until the turkey is thoroughly cooked. Let the meatloaf stand for 5 minutes before serving.
