Ingredients

  • 3 slices bacon, chopped

  • 3/4 cup green onion, sliced

  • 3 cloves garlic, minced

  • Four 15-ounce cans navy or great northern beans

  • One 8-ounce can crushed pineapple, undrained

  • 1/4 to 1/2 teaspoon jalapeño pepper, minced

  • 1/2 cup packed light brown sugar

  • 1 cup pineapple juice or apple juice

  • 2 tablespoons Dijon-style mustard

  • 1/4 teaspoon pepper

Directions

  • Fry the bacon in small skillet until crisp; drain the bacon thoroughly on paper towels, reserving 1 teaspoonful of bacon fat in the skillet.

  • Add the onions and garlic to the reserved bacon fat in the skillet, and sauté until tender, 4-5 minutes.

  • Mix all the ingredients in 1 1/2-quart casserole. Bake, covered, at 350°F. for 1 1/2 hours, then bake uncovered for 30 minutes.
