1 cup all-purpose flour
1 cup cornmeal
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup nonfat milk
1/2 cup egg substitute
1/4 cup orange juice
2 tablespoons canola oil
Mix together the cornmeal, flour, sugar, baking soda, baking powder, and salt in a large bowl.
Combine the wet ingredients (egg substitute, milk, orange juice, and oil) in a small bowl until blended together.
Add the wet ingredients into the dry ingredients, and stir until combined. The batter will appear to be fairly thin.
Pour the mixture into a greased 9 inch square baking dish.
Bake at 400°F for 20-25 minutes or until an inserted toothpick comes out clean.
