1 cup natural peanut butter
1 cup sugar
1 large egg, lightly beaten
1 teaspoon vanilla extract
Coarse sea salt to taste
Set an oven to preheat to 350°F.
While the oven is preheating, mix the peanut butter, egg, sugar, and vanilla extract in a bowl until well mixed.
Spoon 1 tablespoon portions of the mixture onto an ungreased baking sheet and flatten the mounds of dough with a fork dipped in sugar.
Lightly sprinkle salt on top of the cookies and place in the oven to bake for 5 minutes.
Switch the positions of the trays in the oven and bake for 5 additional minutes.
When the cookies are golden brown, take them out of the oven and let them cool for 2-3 minutes before serving.
