Ingredients

  • Filling:

    • 4 tablespoons unsalted butter

    • 1 cup onion, finely chopped

    • 1 rib celery, finely chopped

    • 1/3 cup flour

    • 1 1/2 cups chicken broth

    • 1 1/2 cups whole milk

    • 1/2 teaspoon dried sage

    • 1/2 teaspoon dried thyme

    • 1 1/2 cups diced cooked chicken

    • 2 cups frozen mixed vegetables, thawed

    • Salt, to taste

    • Black pepper, to taste

  • Biscuit topping:

    • 2 cups flour

    • 1 tablespoon baking powder

    • 1 teaspoon sugar

    • 1/2 teaspoon salt

    • 1/4 cup unsalted butter, cut into 1/4-inch pieces

    • 3/4 cup whole milk

Directions

  • Preheat an oven to 375 F.

  • Place an oven safe pan with high sides on a stove top and melt the butter in the pan. When the butter is melted, stir in the chopped celery and onion. Cover the pan, reduce to medium heat, and let cook for 7-8 minutes, stirring occasionally. Add the flour and stir for 1-2 minutes.

  • Stir in the chicken stock. When the chicken stock begins to thicken, stir in the milk.

  • Add the chicken, sage, thyme, vegetables, and salt and pepper to taste. Continue to stir until heated throughout. When heated, remove the pan from the stovetop.

  • To make the biscuit topping, add the flour, salt, baking powder, and sugar into a bowl. Add the butter and rub it into dry ingredients. Add the milk and stir only until the dough comes together.

  • Flour a work surface and knead the dough 2 to 3 times. Flatten the dough until about 1/2-inch thick. Cut the dough into biscuits using a small round cutter. Place as many on top of the filling that will fit into the pan. Any extras may be baked separately on a lightly greased pan for about 15 minutes, or until golden brown.

  • Place the pan in the oven and bake for 20-30 minutes, until the filling is bubbling and the biscuits are golden brown.

  • Let cool for 5-10 minutes and serve.
