Ingredients

  • 2 cups coarsely chopped zucchini

  • 1 1/2 cups coarsely chopped onions

  • 1 red bell pepper, coarsely chopped

  • 1 pound extra lean ground turkey

  • 1/2 cup uncooked couscous

  • 1 egg

  • 2 tablespoons Worcestershire sauce

  • 1 tablespoon Dijon mustard

  • 1/2 cup barbecue sauce

Directions

  • Preheat an oven to 400°F and grease a muffin pan.

  • In a large bowl, combine the chopped zucchini, onions, and bell pepper with the ground turkey, uncooked couscous, egg, Worcestershire sauce, and Dijon mustard, mixing well.

  • Fill the muffin cups 3/4 full with the turkey mixture. Top each cup with 1 teaspoon of barbeque sauce.

  • Bake for 25 minutes or until the internal temperature of each meatloaf is at least 160°F.
