2 cups Monterey Jack cheese, grated
1/2 cup Parmigiano-Reggiano cheese, grated
3/4 cup fresh goat cheese, crumbled
4 flour tortillas, 10-inch
1 tablespoon butter
Combine the cheeses in a medium bowl.
Layer the cheeses on top of each tortilla. Fold the tortillas in half and butter the outside of the tortilla.
Cook each quesadilla in a non-stick skillet over medium heat until it turns golden brown and the cheese is melted, about 4-5 minutes each side.
Serve immediately.
