Ingredients

  • 1 small butternut squash (or other squash)

  • 1 teaspoon vegetable oil

  • 1/2 can chili peppers

  • 1/2 teaspoon salt

  • 1/2 teaspoon chili powder

  • 2 tablespoons grated Monterey Jack cheese

Directions

  • Peel the squash and cut into 1/2-inch pieces. Remove the seeds.

  • Add oil to a skillet and heat to medium heat.

  • Add the squash, cover, and cook for about 10 minutes, stirring occasionally.

  • Add the chili peppers, salt, and chili powder, stirring occasionally. Continue cooking for two minutes.

  • Sprinkle with the cheese and serve.
