Ingredients

  • 1 cup zucchini

  • 1 small potato

  • 5 ounces frozen spinach

  • 1 large onion

  • 2 cloves garlic, crushed and chopped

  • 2 tablespoons olive oil

  • Salt to taste

  • Pepper to taste

  • 32 ounces chicken stock or vegetable stock

  • Red pepper flakes to taste

  • 1/2 cup fresh cilantro, chopped

Directions

  • In a large pot, sauté the onions in olive oil and add salt if desired.

  • Add the garlic and sauté over medium heat until the onions are soft.

  • Add the stock, sliced zucchini and potato, salt, and pepper.

  • Bring the ingredients to a boil.

  • Reduce heat and let simmer for 30 minutes.

  • Add the frozen spinach.

  • Transfer ingredients to a blender or food processor and blend until desired consistency.
