Ingredients

  • 1/4 cup light brown sugar

  • 2 teaspoons ground cumin

  • 1 teaspoon hot paprika

  • 1 teaspoon dried thyme

  • 1 teaspoon kosher salt

  • 1/4 teaspoon cayenne pepper

  • 1 large egg white

  • 1 tablespoon water

  • 1 pound (about 3 cups) raw whole almonds

Directions

  • Heat the oven to 275°F and coat a baking sheet with cooking spray.

  • Mix the brown sugar, cumin, paprika, thyme, salt, and cayenne pepper in a bowl. In a separate bowl, whisk the egg white and water until foamy. Add the almonds and stir to coat. Pour the mixture through a sieve to remove the excess egg white.

  • Add the almonds to the bowl of spices and coat. Spread them on the prepared baking sheet and bake for 30 minutes. After 30 minutes, reduce the oven temperature to 200°F, stir the nuts, and bake about 30 minutes more or until the almonds are dry and golden. Cool about 20 minutes before serving.
