Ingredients

  • 6 baby red potatoes

  • 1 8-ounce. pickled herring fillet, drained

  • 3 tablespoons low-fat sour cream

  • 2 tablespoons red onion, finely chopped

  • 1/8 teaspoon salt

  • Freshly ground black pepper

Directions

  • Place a steamer basket into a large saucepan. Add 1 inch of water and bring to a boil. Place the potatoes in the basket and cook for about 15-20 minutes until barely tender. Let cool and slice each potato into 1/4 inch-thick slices. Sprinkle with salt.

  • Cut the herring fillets into small pieces. Place herring pieces on the potato slices and add sour cream and chopped red onion on top. Garnish with dill and pepper and serve.
