Ingredients

  • 3 tablespoons olive oil

  • 1 pound dry lentils, soaked overnight

  • 1 medium onion, diced

  • 6 garlic cloves, crushed

  • 2 cups tomatoes, diced and peeled

  • 1/2 teaspoon achiote powder

  • 2 teaspoons ground cumin

  • 1 tablespoon chili powder

  • 8 cups water

  • 3 tablespoons finely chopped cilantro

  • Black pepper to taste

  • Salt to taste

Directions

  • Heat the oil in a large pot over medium heat.

  • Sauté the onions and garlic for about 5 minutes or until onions are tender.

  • Add the tomatoes, achiote, cumin, chili powder, salt, and pepper. Cook for 5 minutes, stirring occionally.

  • Add the lentils and 8 cups of water and bring to a boil.

  • Reduce the heat and simmer for 2 hours.

  • Top with cilantro and serve.
