Ingredients

  • 1 1/2 lbs small red potatoes, cubed, unpeeled

  • 1 teaspoon olive oil

  • 1 medium onion , chopped

  • 1 teaspoon dried thyme

  • 1 teaspoon dried basil

  • 1/2 teaspoon dried oregano

Directions

  • Add the potatoes to a large pot of water over medium heat. Bring to a boil and simmer until tender, about 15 minutes. Drain and set aside.

  • In a small saucepan, sauté the onion in the oil until tender. Mix in the potatoes and all herbs.

  • Serve warm or at room temperature.
