Ingredients

  • 1 tablespoon vegetable oil

  • 1 small onion, chopped

  • 1/2 head (3-4 cups) cabbage, chopped

  • 1 large potato, peeled and diced

  • Two 14 1/2 ounce cans of low-sodium, fat-free chicken broth

  • Two 15 ounces cans of cream-style corn

  • 1 cup lean (8% fat) ham, chopped

  • 1/2 teaspoon black pepper

  • 1/2 cup cheddar cheese, grated

Directions

  • Add the oil to a large pot, and heat over medium heat. Add the onions, cabbage, and potato to the pot, and sauté for approximately 10 minutes or until the ingredients soften.

  • Add the broth, corn, ham, and pepper to the pot. Cover, reduce heat slightly, and allow the soup to simmer for approximately 10 minutes or until the potatoes become tender.

  • Using a ladle, scoop 1 cup portions of soup into individual bowls, top with cheese, and serve hot.
