Ingredients

  • 3 medium baking potatoes

  • 2 tablespoons lemon juice

  • 2 teaspoons olive oil

  • 1 teaspoon dried oregano

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon salt

  • 2 cloves garlic, minced

  • Vegetable oil cooking spray

Directions

  • Preheat an oven to 400 degrees F.

  • Wash each potato and leave the skin on.

  • Cut the potatoes lengthwise in half, then cut those halves in half, and cut in half once more to get 8 wedges per potato.

  • Mix the lemon juice, olive oil, oregano, pepper, salt, and garlic in a bowl.

  • Add the potatoes to the mixture and toss with hands to coat.

  • Coat a cooking sheet with cooking spray and arrange the potatoes skin side down.

  • Bake for 45 minutes, or until the potatoes are soft and lightly browned.
