Ingredients

  • 1 medium onion, chopped

  • 2 garlic cloves, finely chopped

  • 3 tablespoons extra-virgin olive oil

  • 1/4 teaspoon salt

  • 1/2 teaspoon hot red pepper flakes

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground allspice

  • 2 1/2 cups whole tomatoes in juice, drained, reserving juice, and chopped

  • Pinch of sugar

  • 1/8 teaspoon salt

  • 1 1/4 pound large peeled and deveined shrimp

  • 2/3 cup feta cheese, crumbled

  • 2 tablespoons chopped dill

Directions

  • Preheat an oven to 375°F.

  • Place the chopped onion and garlic in a 4-quart heavy saucepan with the olive oil and 1/4 teaspoon salt. Cook over medium heat for approximately 5 minutes, until the ingredients soften.

  • Mix in the spices and cook while stirring, for 30 seconds. Stir in the drained whole tomatoes with the sugar and simmer for about 20 minutes. Remove the pan from heat.

  • Sprinkle 1/8 teaspoon of salt on the shrimp and mix them into the tomato sauce. Move the ingredients to a shallow baking dish and top the shrimp with feta cheese. Bake for 18-20 minutes or until the shrimp is cooked through. Top with dill and serve.
