Ingredients

  • 2 medium russet potatoes

  • Butter-flavored cooking spray

  • 1 tablespoon fresh rosemary, minced

  • 1/8 teaspoon freshly ground black pepper

Directions

  • Preheat the oven to 375°F.

  • Wash and pierce the potatoes with a fork. Bake for 1 hour until the skins are crisp.

  • Carefully cut the potatoes in half, scooping out all of the pulp except 1/8 inch attached to the skin. (Save the pulp for another use.)

  • Spray the inside of each skin with butter-flavored cooking spray. Sprinkle with fresh rosemary and black pepper. Bake for 5-10 minutes. Serve immediately.
