Ingredients

  • 1 teaspoon olive oil

  • 1 small onion, chopped

  • 4 stalks celery, chopped

  • 1/2 teaspoon salt

  • 7 cups water, or chicken broth

  • 2 medium potatoes, peeled and diced

  • 4 garlic cloves, minced

  • 1 bay leaf

  • Thyme to taste

  • Parsley to taste

Directions

  • Heat the oil over medium heat and add the onion and celery. Season with salt and cook for about 10 minutes, stirring frequently until tender.

  • Stir in the potatoes, garlic, and herbs.

  • Add the water and broth and bring the mixture to a simmer for 30-40 minutes and cover.

  • Remove from heat when vegetables are tender.

  • Remove the bay leaf and puree the mixture with a food processor. Pour it back into the original cooking vessel to gently blend and heat through before serving.
