Ingredients

  • 1 8-ounce box whole wheat pasta

  • 1 15-ounce can whole kernel corn

  • 1 15-ounce can black beans

  • 1 cup salsa

  • 1 cup shredded, low fat cheddar cheese

  • 1 cup diced green bell pepper

Directions

  • Cook the pasta according to directions on box. When cooked, drain and add to a large mixing bowl.

  • Drain the liquid out of the cans for the corn and black beans. Make sure to put the liquid from the cans aside for later.

  • Toss all ingredients in the large mixing bowl with the pasta and stir well. Spoon in a small amount of liquids from corn and black bean cans if desired.
