Ingredients

  • 6 ounces multigrain pasta

  • 1/2 of a medium-sized cucumber, chopped

  • 1/2 of a medium-sized red bell pepper, chopped

  • 1/2 cup fat-free sour cream

  • 1/2 cup reduced-fat mayonnaise

  • 1/4 cup crumbled feta cheese

  • 3 tablespoons chopped fresh mint leaves

  • 3 tablespoons 2% milk

  • 1 tablespoon Dijon mustard

  • 1 teaspoon lemon juice

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

Directions

  • Cook the pasta according to the package directions. Drain and rinse the pasta.

  • In a large bowl, stir together the mayonnaise, sour cream, feta cheese, mint, mustard, milk, lemon juice, salt, and pepper.

  • Add the cucumber, red pepper, and pasta to the large bowl and mix. Season to taste with the salt and pepper.
