Ingredients

  • 1 pound lean ground beef

  • 1 small onion, chopped

  • 3 cloves garlic, minced

  • 1 can diced tomatoes with liquid

  • 1 1/4 cup water

  • 1 cup tomato sauce

  • 1 tablespoon dried parsley flakes

  • 1 teaspoon dried basil leaves

  • 1 teaspoon dried oregano leaves

  • 1 teaspoon salt

  • 2 1/2 cups whole wheat lasagna noodles

  • 1 cup fat-free cottage cheese

  • 1/4 cup fat-free grated Parmesan cheese

  • Dash of basil and black pepper, optional

  • 1 egg

  • Shredded fat-free mozzarella cheese, for garnish

Directions

  • Cook the beef, onions, and garlic cloves in a large skillet over medium heat until the beef has browned. Drain.

  • Add the tomatoes, water, tomato sauce, parsley, basil, oregano, and salt to the skillet, stirring well.

  • Add the uncooked lasagna noodles and bring to a boil, stirring occasionally. When boiling, reduce the heat, cover, and simmer for about 20 minutes, or until the pasta is tender.

  • Meanwhile, combine the cottage cheese, Parmesan cheese, and egg. Add a dash of basil and black pepper if desired. Stir this cheese mixture into the pasta. Cover and cook for another 5 minutes.

  • Sprinkle with mozzarella cheese before serving.
