Ingredients

  • 1 cup old-fashioned rolled oats (not instant)

  • 1 cup non-fat milk

  • 1 cup whole wheat flour

  • 2/3 cup brown sugar

  • 2/3 cup unsweetened applesauce

  • 2 egg whites

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 4-6 tablespoon unsweetened cocoa powder

  • 1/2 teaspoon salt

  • 1 cup dark chocolate chips

Directions

  • Soak the old fashioned oats in the milk for one hour at room temperature.

  • Preheat oven to 400 degrees and lightly spray a muffin pan with non-stick spray.

  • Mix the oats and milk with the applesauce and egg whites until combined.

  • Separately whisk the flour, brown sugar, baking powder, baking soda, unsweetened cocoa powder, and salt together.

  • Combine the wet ingredients and the dry mix. Add dark chocolate chips and mix.

  • Spoon the mixture into the muffin pan and bake for 20-25 minutes.
