Ingredients

  • 1/2 chopped yellow onion

  • 1/2 cup chopped carrots

  • 2 garlic cloves, minced

  • 3 cups low sodium vegetable broth

  • 1 tablespoon tomato paste

  • 2 cups chopped cabbage

  • 1/2 cup green beans

  • 1/2 teaspoon basil

  • 1/2 teaspoon oregano

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1/2 cup chopped zucchini

Directions

  • Spray a large pot with non-stick cooking spray.

  • Sauté the onions, carrots, and garlic on medium-low for 5 minutes or until soft.

  • Add the broth, tomato paste, cabbage, green beans, basil, oregano, salt, and pepper.

  • Simmer for 20 minutes, add the zucchini, and simmer for another 5-10 minutes.

  • Serve immediately.
