Ingredients

  • 1 large bunch broccoli (approximately 1 ½ pounds)

  • ¼ cup nonfat plain yogurt

  • ¼ cup reduced-fat mayonnaise

  • 3 tablespoons apple cider vinegar

  • 2 teaspoons sugar

  • ½ teaspoon Salt

  • Freshly ground black pepper

  • 1 can low-sodium sliced water chestnuts, coarsely chopped

  • ½ cup finely diced red onion

Directions

  • Cut the broccoli into small pieces of less than ½ inch.

  • Combine the yogurt, vinegar, and mayonnaise in a medium sized mixing bowl. Add the sugar, salt, and pepper.

  • Combine the broccoli, onion, and water chestnuts in a gallon sized plastic freezer bag. Add the dressing to bag and shake until completely coated.

  • Place the bag in the refrigerator until ready to serve.
