Ingredients

  • 1 roasted chicken

  • ½ cup barbecue sauce

  • 1 cup canned black beans, rinsed

  • ½ cup frozen corn, thawed

  • ¼ cup reduced-fat sour cream

  • 4 leaves romaine lettuce

  • 4 10-inch whole wheat tortillas

  • 2 limes, cut into wedges

Directions

  • Discard the skin from the roast chicken and remove and shred the meat to yield about four cups.

  • In a skillet over medium-high heat, cook the chicken, barbecue sauce, beans, corn, and sour cream until heated through, about five minutes. Remove from heat and set aside.

  • Lay a lettuce leaf in the center of a tortilla and layer filling on top. Roll into a burrito, and repeat with other tortillas. Serve with lime wedges.
