Ingredients

  • 2 tablespoons olive oil

  • 1/2 cup vermicelli, finely broken, uncooked

  • 2 tablespoons onion, diced

  • 1 cup long-grain white rice, uncooked

  • 1 1/4 cup hot chicken stock

  • 1 1/4 tablespoons white pepper, ground

  • 1 bay leaf

  • 2 tablespoons Parmesan cheese, grated

Directions

  • Sauté the oil, vermicelli, and onion for 2-4 minutes or until golden brown. Drain the excess oil.

  • Stir in the rice, stock, water, pepper, and bay leaf, cover, and simmer for 15-20 minutes. Remove the bay leaf, fluff, recover and let stand 5-20 minutes.

  • Serve immediately and top with cheese.
