Ingredients

  • 1 cup canned unsweetened coconut milk

  • 3/4 cup milk

  • 3 tablespoons sugar

  • 2 tablespoons tapioca

  • 1/2 teaspoon vanilla extract

  • 2 large papayas, seeded and peeled

Directions

  • In a medium saucepan add the coconut milk, milk, sugar, and tapioca together. Boil then reduce to low heat, stir occasionally for about 5 minutes.

  • Remove from heat and stir in the vanilla extract. Cover the mixture and refrigerate for 1 hour

  • Cut the papayas in half and add them to a blender. Puree.

  • Add the papaya puree and pudding together and serve immediately or continue to chill.
