Ingredients

  • 1 medium onion, thinly sliced

  • 1 teaspoon fresh grated ginger

  • ¾ cup chicken broth or vegetable broth

  • ½ cup canned reduced-fat coconut milk

  • 1 teaspoon curry powder

  • 2 teaspoons olive oil

  • 2 cloves garlic, finely chopped

  • 1 cup uncooked whole wheat couscous

  • ½ cup golden raisins

  • ¼ teaspoon salt

  • Dash of cayenne pepper

Directions

  • In saucepan, heat the oil over medium heat. Add the onion, garlic, and ginger. Cook for 1 minute while stirring constantly.

  • Stir in the broth, coconut milk, curry powder, salt, and cayenne and bring to boil. Stir in the couscous and raisins and remove from heat.

  • Cover and let stand 5 minutes.

  • Fluff with a fork before serving.
