Ingredients

  • 1 ½ lb ground beef

  • 1 bay leaf

  • 1 medium onion, chopped

  • 4 teaspoons allspice

  • 1 garlic clove, chopped

  • 1 tablespoon curry powder

  • 6 slices fresh ginger

  • 1 teaspoon cinnamon

  • 1 sweet potato, cubed

  • 1 tablespoon sugar

  • 2 tablespoons tomato paste

Directions

  • In a medium pot, brown the ground beef.

  • Add the chopped onion and cook until softened.

  • Add the bay leaf, allspice, clove, curry powder, ginger, cinnamon, and sugar. Reduce heat and simmer for 10 minutes.

  • Add the sweet potato and tomato paste. Stir occasionally and simmer until the potatoes are tender and the sauce is thickened.

  • Serve with rice or pita bread (nutritional information not included).

  • Note: ½ lb of organ meat may be substituted for ½ lb of ground beef for added nutrition.
