Ingredients

  • 12 slices of whole wheat baguette

  • 3/4 cup cooked edamame beans

  • 1 7.5-ounce package farmer cheese

  • 1/4 cup grated Parmesan cheese

  • Zest of 1/2 lemon

  • 1 tablespoon lemon juice

  • 1 tablespoon fresh basil, chopped

  • 1 tablespoon extra virgin olive oil, plus more for drizzling

  • Salt and black pepper to taste

Directions

  • Preheat an oven to 425ºF.

  • Place the bread slices on a baking sheet. Drizzle with olive oil.

  • Toast for 5-7 minutes. Remove from the oven and set aside.

  • In a large bowl, combine the remaining ingredients (reserve a small amount of Parmesan cheese, basil, and lemon zest) and lightly mash them together. The edamame should only be slightly mashed.

  • Place a heap of the mixture on top of each bread slice. Garnish with reserved Parmesan cheese, basil, and lemon zest.
