Ingredients

  • 8 small papayas, seeded and diced

  • 1/2 cup sugar

  • 1/2 cup water

  • 1/4 cup low-fat coconut milk, divided

  • 2 tablespoons lime juice, divided

  • 1 teaspoon lime zest, divided

  • Salt to taste

Directions

  • Line a large baking sheet with wax paper. Arrange the diced papaya on the sheet and freeze overnight, about 12 hours.

  • Combine the water and sugar in a small saucepan and bring to a boil over high heat until the sugar is completely dissolved, about 5 minutes. Pour into a glass measuring cup and let cool for 15 minutes.

  • Meanwhile, remove the papaya from the freezer. Transfer half of the papaya to a food processor. Add 1/2 of the sugar-water syrup, 2 tablespoons of the coconut milk, 1 tablespoon lime juice, 1/2 teaspoon lime zest, and a pinch of salt. Pulse two or three times until smooth. Transfer to a serving bowl.

  • Repeat with the remaining ingredients.

  • Serve immediately in small glasses or freeze until ready to use.
