Ingredients

  • 2/3 cup all-purpose flour

  • 2 tablespoons sugar

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1 dash of salt

  • 1 tablespoon chilled margarine, cut into small pieces

  • 1/3 cup low-fat vanilla yogurt

  • 2 tablespoons chopped dried peaches

  • 1/2 teaspoon nonfat milk

Directions

  • Preheat an oven to 400 degrees F.

  • In a bowl, combine the sugar, salt, flour, baking soda, and baking powder.

  • Using 2 knives or a pastry cutter, cut the butter into the dry mixture until it resembles coarse meal.

  • Add the dried peaches and yogurt to the mixture until just moistened.

  • On a lightly floured surface, knead the dough lightly about 5 times.

  • Coat a baking sheet with cooking spray and pat the dough into a circle about 5 inches in diameter. Cut the dough into 4 pieces and separate slightly. Brush the nonfat milk over the scones. Bake for 10-15 minutes or until lightly golden.
