Ingredients

  • 4 cups cherries

  • 1/4 cup water

  • 1/3 cup sugar

Directions

  • Preheat an oven to 170 degrees F.

  • Prepare two baking sheets with parchment paper.

  • Remove the pits and stems from the cherries.

  • Place the cherries and water in a large saucepan. Bring to a low boil and reduce the cherries. Stir frequently.

  • Transfer to a food processor and blend until smooth. Return the mixture to the pan and add the sugar. Cook until the mixture thickens, about 10 minutes.

  • Spread the mixture between the two prepared baking pans.

  • Bake in the oven for 5 hours, rotating the pans every hour, until slightly sticky.

  • When cool, flip the pan onto a cutting board and removing the paper.

  • Cut the leather into long strips. Fruit leather keeps best in an airtight container.
