Ingredients

  • 1/2 cup balsamic vinegar

  • 1/4 cup honey

  • 2 cloves finely chopped garlic

  • 2 teaspoons chili pepper

  • 2 teaspoons curry powder

  • 1 teaspoon ground cumin

  • 1 teaspoon ground ginger

  • 1 teaspoon mustard seeds

  • 1/2 teaspoon salt

  • 2 tablespoons extra-virgin olive oil

  • 2 unripe, peeled, and chopped mangoes

Directions

  • Heat all ingredients except the mango and olive oil in a saucepan on medium-high heat and bring to a boil.

  • Reduce heat to medium and simmer, stirring occasionally until thickened, about 5 minutes.

  • Remove from heat and stir in the olive oil.

  • Add the mango and stir well, coating each piece with the mixture.

  • Set aside to cool. When cool, refrigerate for 8 hours or overnight.
