Ingredients

  • 2 boneless, skinless chicken breasts, each 4 ounces

  • 1 tablespoon olive oil

  • 1/2 cup white onion, chopped

  • 1 cup mushrooms, sliced

  • 1 cup white beans, cooked

  • 2 tablespoons garlic, chopped

  • 1/4 cup fresh basil, chopped

  • 12 ounces uncooked rotelle pasta

  • 1/4 cup Parmesan cheese

  • Ground black pepper, to taste

Directions

  • Heat a gas grill or broiler. Coat the grill rack or broiler pan with cooking spray. Position the cooking rack 4-6 inches from the heat source.

  • Cook the chicken 5 minutes on each side until brown and transfer to a cutting board. When cool, slice into strips.

  • Heat the oil in a nonstick frying pan over medium heat. Sauté the onions and mushrooms 5 minutes until tender. Add the white beans, garlic, basil, and grilled chicken strips. Keep warm.

  • Fill a large pot 3/4 full with water and boil. Add the pasta and cook 10-12 minutes, then drain thoroughly. Add the chicken mixture to the pasta and toss.

  • Divide the pasta among plates and garnish with Parmesan cheese and black pepper. Serve immediately.
