Ingredients

  • 1 head of cauliflower, chopped

  • 1/4 cup dry skim powdered milk

  • 3 tablespoons flour

  • 1/4 teaspoon salt

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon dried oregano

  • 1/4 teaspoon dried basil

  • 1/4 teaspoon cayenne pepper

  • 1/8 teaspoon coarse ground black pepper

  • 1 1/2 cups skim milk

  • 1/3 cup shredded low-fat cheddar cheese

  • 1 tablespoon Dijon mustard

Directions

  • Steam the cauliflower for 3-4 minutes. Place into a medium saucepan and add the dry milk powder, flour, salt, garlic, oregano, basil, cayenne pepper, and black pepper.

  • Stir well over medium heat and slowly whisk in the skim milk. Continue stirring for 5 minutes until the contents are thoroughly mixed.

  • Add the cheddar cheese and cook until melted. Whisk in the mustard. Place the cauliflower on a serving plate and pour the sauce on top. Serve.
