Ingredients

  • 2 teaspoons olive oil

  • 1/2 small red onion, chopped

  • 2 teaspoons fresh thyme, minced

  • 4 boneless skinless chicken breasts, cut in half

  • 1/3 cup sugar free blackberry jam

  • 1 tablespoon balsamic vinegar

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

Directions

  • In a medium skillet, heat olive oil over medium. Add onion and thyme and cook for 5 minutes. Remove and set aside.

  • Place chicken in the frying pan and cook for 7 minutes on each side until browned. Add onion and thyme mixture and stir.

  • Add jam, vinegar, salt, and pepper and cook until the jam melts.

  • Cover the skillet, reduce heat, and simmer until the chicken is thoroughly cooked.
