Ingredients

  • 1/4 cup tofu, pureed

  • 1 cup soy milk

  • 1 tablespoon canola oil

  • 1/2 cup water

  • 1 1/4 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

Directions

  • Whisk the pureed tofu with the soy milk, canola oil, and water. Set aside.

  • Combine the flour, baking powder, and salt, and slowly mix this into the tofu mixture until all the lumps are beaten out.

  • Spray a griddle with cooking spray and drop a ladleful of pancake mix onto the griddle. When bubbles start to form, flip the pancake to cook the other side for 2 minutes. Serve immediately.
